Cardamom is known as "the queen of spices" because it has such an intoxicating exotic flavour and aroma. It has a warm sweet penetrating aroma of complex flavours that incorporate camphor, lemon, mint, pepper, and floral notes.


Popularly available in 3 types:-

  1. White: are simply green cardamoms that have been bleached of their colour so as to seamlessly mix with the dish that they are added to.

  2. Green: Green cardamom pods are harder to find and more expensive than the other forms of cardamom in part because of their superior ability to retain aroma and flavour longer. This premium form of cardamom is all connoisseurs will use in any recipe which calls for cardamom.

  3. Black: Its flavour is much earthier with sweetness and a flowery accent that is different from that of true cardamom's. It is an ingredient used in some African cooking and abroad to add a bacon like flavour to some vegetarian dishes.


Cardamoms are packed in 25 kg (net packing) jute bags.

Cardamoms are an expensive commodity. Hence, they are normally shipped alongside other commodities. A single 20 ft. F.C.L. carries around 11 M. tons of Cardamom.
